The juicy, shiny pink seeds of the fresh fruit are sprinkled on salads and on tahina sauce for fish. Cut the fruit in half, scoop out the seeds and discard the bitter-tasting pith. Dried wild seeds give a sharp flavour to hummus and tahina.
