If you would like to make your own sushi seasoning, place 100ml (3½fl oz/½ cup) rice vinegar, 50g (1¾oz/¼ cup) caster (superfine) sugar, ½ tsp salt and ½ tsp instant dashi powder into a pan, warm it through while stirring to dissolve. Take off the heat and let it cool to room temperature.
