Medium bean curd lends some springiness to the meatballs in pong tauhu. My mother, and now my sister, would buy the traditional round balls of bean curd one can only find in wet markets. These round ones are not super soft but are medium firm. Alternatively, medium bean curd found in supermarkets would be a good substitute. For the low-key pork and meatball soup which we sometimes cooked for our daily meals, we often used the soft silky type of bean curd.
