These nuts provide a creamy texture to dishes they are used in, serving as a thickener. A relative of macadamia nuts, they are pounded whole and raw. However, unlike macadamia nuts, candlenuts must be cooked before they can be eaten as they are slightly toxic. Avoid dry nuts that look like they are flaking on the surface. Buy only what you need. Candlenuts can turn rancid quickly. Store them in the refrigerator.
