I have always assumed that coriander was an Asian spice since it was used for curry powder, itek sio and ati babi. Interestingly, coriander (cilantro) was first grown in Southern Europe and is believed to have been introduced to Egypt and Europe by the Roman soldiers. The more frequently used light brown seeds give a sharp, almost citrusy aroma. Most times, coriander is ground as fine as possible. Alternatively, you can use ground coriander powder for a smoother texture if the ground seeds seem too gristly.
