In this book, ghee is used in the Indian dish nasi biryani. This clarified butter is often used in Indian cooking.

Traditionally, Indian ghee might have been made from the milk of water buffalos and certain brands might be too overpowering in taste.
My Indian friend prefers to make her own clarified unsalted butter to ensure the best quality for herself. My mother always used the QBB brand with its signature green tin.
