  • About
Treacle is another name used to describe dark molasses, a thick and gooey by-product of sugar refining. It is used in fruit cake to give it its dark colouring. Its slightly bitter tinge offsets the sweetness of the candied fruit in the cake.
Sometimes, light molasses, also known as golden syrup is used instead. This is what contributes to a lighter coloured fruit cake.
