Unless specified, the book uses ground white pepper where it is required. White pepper is actually hotter than black pepper and is produced from soaking black pepper in water until the outer black skin disintegrates, thus exposing the inner white core with the more intense flavour. Pepper is frequently used to enhance the flavour of a dish, and it also aids in digestion.
