For the recipes in this book, unless they specify otherwise, I use ordinary table salt or fine sea salt. The difference between them is that table salt is mined from underground salt deposits, while fine sea salt is made directly through the evaporation of seawater. Sea salt is marketed as healthier and fancier but, truthfully, it tastes almost identical to table salt and has the same basic nutritional value.
