This root vegetable can grow up to 1-m (40-in) in length. It is low in calories and full of nutrients. In Japan, people eat only the roots but the leaves can also be eaten in salads. Burdock is said to lower blood pressure and cholesterol. The root vegetable is in season in April to May and November to February. When choosing burdock, select those coated with soil as the soil keeps the beautiful aroma of the root intact. The best kinds of burdock for cooking are straight with smooth skins. Discard those with cracks in the skin. To store burdock, wrap with newspaper and store it in cool and dry place.
