Miso is made from fermented soy beans, barley or rice mixed with salt and kohji (a type of fungus used for making sake). There are many varieties of miso from different regions in Japan. You can also purchase miso kits to make miso at home. Miso is rich in protein and calcium. The best way to keep miso is in the freezer as it wonโ€™t freeze, or simply store it in the refrigerator.
