cryovac / a system of heat-resistant plastic bags with vacuum sealing for poaching in liquid or steaming. For home cooks, if you develop a relationship with your local butcher you may be able to purchase cryovac bags from them and once you have filled the bags you can return and ask them to heat seal them for you prior to cooking.
