Always follow the proper safety procedure when working with liquid nitrogen: wear appropriate protective eyewear and gloves and always pour nitrogen into an insulated bowl or small styrofoam container. Avoid splashing liquid nitrogen on your body and take particular care with your eyes. Never consume liquid nitrogen directly. Allow food that has been frozen in liquid nitrogen some time for the gas to completely evaporate before consuming.
