white soy sauce / shiro shoyu is a clear, light golden-coloured soy that is actually a byproduct of the traditional Japanese shoyu (soy sauce) making process. It is used in this book to briefly marinate fish without leaving the dark soy stain. Available from specialist Japanese grocers.
