A dough scraper is a rectangular stainless steel blade -usually about 7.5 x 12.5cm - set in a handle. It is used for keeping the work surface free of stuck dough and for cutting dough into pieces. A silicone bowl scraper is a useful tool for cleaning out the inside of a mixing bowl, filling a pastry bag, or smoothing a batter or filling with a flat edge.
