  • A rich dish—based on lamb, veal or beef, for instance—is best paired with a rich wine.
  • A light dish—fish or vegetarian—goes best with a light wine.
  • A complex dish requires a more complex wine.
  • A simpler dish is well-served by a simpler wine.

Many a happy match is made by keeping an open mind and experimenting. The most important rule is this: If it tastes good, then it works.
