You need to use twice as many dried herbs as you would fresh ones to achieve the same amount of flavor. Consider your desired end goal when choosing whether to use dried or fresh herbs—for example, a dry or low-fat dish may not get much flavor from a dried herb if the dried herb requires moisture to release its flavor.
