The hand that is not holding the knife—your stabilizing hand—plays an important role in the cutting process. Perfecting your ability to stabilize an item can speed up the cutting process, as the hand rotates and positions the vegetable.

The curled claw grip, used to secure the vegetable with the fingertips of your stabilizing hand, is done by curling your fingertips to create a claw, so your hand position has the space to accommodate almost any fruit or vegetable and your delicate fingertips are hidden away from the undiscriminating blade you are wielding. When using the claw method correctly, the flat span of your knuckles can serve as a guide for your blade and assist in cutting at accurate angles. Your fingers should be tucked under, making your second knuckle a vertical cliff against which to brace and guide your blade. With practice, a mutual pressure between your knuckle and your blade means your knife can follow your guiding hand across your cutting field, and then your speed and precision are synced.
