The most misused, and perhaps misunderstood, presentation style is a deconstructed plate. Deconstructed presentations are interesting because they expose or even highlight elements of a dish that would otherwise be hidden or combined in a way that removes their individual qualities, such as basil in a tomato soup. Taking all ingredients of a dish, treating each one with special care, and presenting them together in a different way encourages a new sensorial experience of otherwise-familiar flavors or foods—consider a baba ghanoush comprised of eggplant canapés, for example, rather than the classic spreadable puree.
