Also known as asam keping or dried tamarind skin, asam gelugor is used as a souring agent in Asian cooking. This is actually the fruit of the Garcinia atroviridis. The ripened fruit is sliced thinly, then sun-dried and packed for sale. Asam gelugor can be purchased at most Asian supermarkets. Substitute with tamarind juice which can be found in local grocery stores.
