Palm sugar is made from the sap of certain palm trees. It comes in cylindrical blocks or discs and goes by different names in different parts of Malaysia. The more common names include gula Melaka, gula kerek and gula manisan. It is similar in taste to Indian jaggery but darker and not as sweet. Slice, chop or shave off the amount needed.
