Bird’s eye chillies are also known as little devil chillies. They are an essential ingredient in making curries, rendangs and sambals to give the dishes a chilli kick. They are tiny, but fiery hot and have an intense flavour. Just a few goes a long way. I indicate green or red bird’s eye chillies in recipes where the colour makes a difference, but in many of the recipes, you can choose to use either. I use whatever is available.
