Wheat berries are the whole-grain seed of the wheat plant, similar in size to green lentils, with a slightly nutty flavor and chewy texture. They are ground to make flour or left whole to be used as a cooked grain. Wheat berries are getting easier to find, especially in the bulk section of grocery stores. Substitute barley or farro if you can’t find wheat berries.
