Cut the aubergines into wedges, salt them as described above and then wipe clean. Arrange on a baking sheet with about 2 cm between them and brush both fleshy sides of each wedge–I brush one side, turn that side flat onto the baking sheet and then brush the other side. Season with salt and pepper and roast the aubergines at 180°C for about 30 minutes or until soft on the inside and nicely browned on the outside.
