Saba, sometimes spelled sapa, is a syrup made from cooked grape must. It is known by various regional names throughout Italy, including vin cotto (literally ‘cooked wine’) and mosto cotto (‘cooked must’). It’s sometimes flavoured with other fruit, such as quince.
