This variety is my favourite tomato for making sauces; if I can’t get good ones, I use truss cherry tomatoes. If fresh tomatoes are out of season, use drained canned Italian tomatoes; they have better flavour than anaemic unripe tomatoes or ones that have been gassed to make them look ripe.
