To wrap foods, usually meat roasts or birds, with a thin sheet of fatback. This prevents the surface of the food from drying out, protects from direct heat, and bastes the food as the fat renders. Traditionally, a bard is used to cover the breasts on a roast chicken to slow down their cooking so it matches that of the thighs.
