Foams and froths (a froth is an especially airy foam with big bubbles; think cappuccino) are like emulsions except that one of the components is a gas such as air, carbon dioxide, or nitrous oxide. Foams are made using any number of devices, including an immersion blender (for a rather coarse froth-like foam), a whipping siphon, or a rotor stator homogenizer (for a very fine foam; see FOAMS).
