So often used in Italian cooking that it’s almost universal, finely chopped or sliced garlic gently cooked in olive oil or butter makes a simple and satisfying sauce. Italian cooks often cut the garlic into paper-thin slices and cook them very slowly until they turn pale brown and develop a nutty flavor.
