Ground walnuts are used in Genoa and the surrounding region of Liguria to make pasta sauces. Traditionally, raw walnuts are ground to a paste, but it’s also possible to leave them slightly chunky so the sauce has some texture. The walnuts can also be roasted to bring out their flavor.
