You either love them or you hate them, and my goal is to get you to love them. Jarred capers in a brine are quicker to prepare and don’t require rinsing. This is my go-to variety. Salted capers feel a bit more luxurious but require thorough rinsing before using. Whichever you choose, make sure that you are using just the capers—drain off any brine and rinse off any salt.
