The flower buds from the Capparis spinosa, a Mediterranean shrub. The buds are hand picked before they open, then dried and preserved either in a coarse salt or vinegar. Rinse under cold water before using. The finest capers grow on the islands of Pantellerie and Salina close to Sicily.
