Many varieties of chilli are sold fresh or dried. They come in various shapes, sizes and colours, the most common being red and green. Red chillies are sweeter and milder. The smaller the chilli the hotter it will be. Choose firm chillies with shiny skins. When preparing chillies, split them lengthways and remove the stalk and seeds. Avoid touching your skin and wash your hands and any equipment used.
