Available in sheet and powdered form, it is produced from collagen extracted from the skin and bones of young animals. Each sheet usually weighs 2 g and has a long shelf life. Powdered gelatine loses strength once opened, which can make stocks and jellies appear cloudy. Also, it is difficult to weigh accurately in small amounts.
