(see also Dried Mushrooms) Morels occur in early spring. They are hollow and cone shaped with a surface of crinkled cavities that trap a lot of dirt. They vary in size and colour from very small to the size of an egg and from tan to dark brown. The French varieties have a more pronounced nutty flavour. Dried morels reconstituted in warm water until soft can replace fresh morels.
