Also known as Mangrove Crab, Muddy or Black Crab, it is found in warm tropical waters and mangrove forests. Mud crabs have hard, dark brown or mottled green shells. They can live for three years and weigh up to 3.5 kg. They have a firm texture with delicate, sweet meat. Buy crabs that are alive as they deteriorate rapidly once dead. They should feel heavy in relation to their size and have both claws still attached. Keep live crabs refrigerated, covered with damp newspaper, until ready to cook. Substitute with any other fresh crab meat. Buy pre-cooked, picked crab meat from a reputable fishmonger.
