Squid Ink

Contained in little dark silvery sacs in the body of the squid. Remove from the squid and squeeze out the ink. Dilute with a little water and pass through a fine sieve before using. Squid ink can be bought in jars or sachets at good fishmongers or stores. Freeze if not using all at once. Ink is also obtained from cuttlefish and octopus.
