A dish of finely chopped, high-quality, raw lean meat or fish. Traditionally made from beef with the addition of chopped gherkins, capers, cocktail onions and herbs. Flavour with Dijon mustard, Tabasco, Worcestershire sauce, brandy, salt and freshly ground pepper. Usually shaped into a mound with an indentation in the top, into which is placed a raw egg yolk.
