(see also Dried Mushrooms) Also known as ‘horn of plenty’. A very distinctive mushroom; it has a blue-grey colour and is completely black when wet. Unlike other mushrooms it doesn’t have a cap but the stem and cap form a continuous hollow. Trim the base before briefly sautéing in olive oil over a high heat. Also available dried.
