Thin, crisp, sweet biscuits made from egg whites, flour, icing sugar and unsalted butter. With the addition of different ingredients the flavour can be easily changed, e.g. almond meal, pistachio, cocoa powder, grated orange or lemon zest, or honey. The tuilles can be shaped on baking sheets before cooking using stencils, or shaped once cooked and still warm by draping them over a rolling pin or cutting out with plain pastry cutters.
