The juice extracted from unripe fruit, most commonly wine grapes. A premium flavour enhancer and tenderiser, it is a good substitute for lemon juice and vinegar. Its unique balance of sweet and sour adds richness and flavour, making it excellent for dressings, sauces, marinades, poaching and deglazing. It shares the same acid-base as wine, making it compatible with all wine styles. Verjuice has an affinity with nut oils and emulsifies well with mild-flavoured, creamy olive oils.
