Produced from walnuts with high oil content. Once harvested, the walnuts are stored for 2–3 months to allow their milky juices to transform into clear oil before being pressed. Not usually served neat, it is used as a flavouring in dressings, sauces and pastries. It has a short shelf life, so buy in small quantities.
