Yabby

Freshwater crayfish found in Australian waters. Lobster or Dublin Bay prawns can be used as a substitute for yabby, which is best cooked when still alive. Before cooking, the bitter intestinal tract should be removed. This is done by twisting the middle section of the tail and gently pulling it out.
