Bain-marie (also known as a water bath): a French term for the technique of, say, melting chocolate in a bowl set over a pan of gently simmering or hot water. You’ll need a heatproof bowl that fits over a pan, leaving enough room underneath the bowl to put water in the pan, BUT the bowl must not touch the simmering water underneath. You also cook some custards and certain cakes (cheesecakes) in a bain-marie.
