Seed to Table: A Seasonal Guide to Organically Growing, Cooking, and Preserving Food at Home

By Luay Ghafari

Published 2023

  • About
Native to southern Peru and northwestern Bolivia, the potato is now a staple food that is cultivated around the world. From French fries to vodka, potato uses seem to be endless. The flavor of freshly harvested new potatoes is divine.

Growth pattern: What makes potatoes different from other crops is that potato plants do not typically begin their life from seed but from a seed potato. A seed potato is not a seed, but rather an actual potato cultivated for the purpose of sprouting and replanting. I recommend only using certified organic seed potatoes when you grow potatoes in your garden. This helps mitigate a host of problems that can arise from trying to regrow store-bought potatoes that may have been sprayed with an anti-sprouting agent or may have diseases that could spread in your garden.
