Baharat

This Fertile Crescent spice—whose name is the generic term for “spice” in Arabic—is sold in Middle Eastern groceries. It is a blend of cloves, cinnamon, cumin, black pepper and nutmeg. You may replace it with equal amounts of allspice, which it closely resembles.
