Banana leaves make a natural wrapper for steaming food. They keep the food moist and release a pleasant aroma. The leaves are also used as plates in much of south Asia, specially by street vendors and for large ceremonies.
The very large, broad, dark green frozen leaves are available, folded in packages, in Asian stores. Thaw thoroughly, carefully unwrap the leaves, soak in warm water for 30 minutes and clean each leaf thoroughly. Rinse with cold water, pat dry, fold and wrap in paper towels. Store in plastic bags in the refrigerator for up to 1 week.
