Filo refers to a paper thin dough. It is available frozen at the supermarket. It should be thawed for 1 hour just before using. Be sure to cover because it dries very easily. If you wish to make your own, use the following recipe:
  • Sift 4 cups all-purpose flour and 1 ยฝ teaspoons salt into a mixing bowl.
  • Combine 1 โ…“ cup warm water and 4 tablespoons oil, and gradually add to the flour. Knead for 10 minutes until you have a satiny dough. Cover and allow to rest for 2 hours.
  • Roll the dough into a long cylinder and divide it into 10 portions.
  • On a floured surface, roll out the dough as thin as possible, dusting with flour to prevent sticking.
