If you must use dried herbs, use only one-quarter of the fresh herbs called for, to allow for the greater intensity of the dried product. For the best flavor, soak the dried herbs in a sieve set in a bowl of lukewarm water for 15 minutes, then drain them and proceed with the recipe.
