Lotus Seeds, Crystallized

These seeds of the Asian or North American lotus are sold dried at Asian markets. You can also buy them in crystallized form, but crystallizing them at home takes just over an hour:
  • 2 cups water
  • 2 tablespoons sugar
  • ยฝ cup dried lotus seeds, soaked in warm water for 1 hour and drained
  • In a small saucepan, bring the water and sugar to a boil.
  • Add the drained lotus seeds and return to a boil. Then reduce the heat and simmer for 20 minutes. Drain and use.
